Zucchini Pancakes Recipe

1 large zucchini

1 egg
·
About a cup of flour
·
Olive or coconut oil
·
Spices (optional)
serves about 3-4
-Start by grating the zucchini. You can use a cheese
grater or chop it very finely.
-Stir together the grated zucchini and egg in a medium
mixing bowl, adding in flour in until you’ve got a consistency like brownie
batter. You don’t want it to be runny
but you also don’t want it to be too dry or it won't cook correctly.
-At this point you can add some spices. I just use salt
and pepper, maybe a little bit of cayenne pepper.
-Heat up the oil in a pan over medium heat, you want to
use just enough to cover the bottom of the pan.
-Once the oil is hot enough, pour in about a quarter cup
of the mixture. Wait until it starts to crisp up, and then carefully flip.
-Cook the pancake until both sides are browned, then set
on a plate with a paper towel to let excess oil drain.
